What is a wood oven?

A wood oven is a calorific device used to heat any type of food that is characterized by its ability to retain heat and release it slowly. And it is that the wood-fired oven allows perfect and uniform cooking that results in a exceptional finish.

What types of wood oven are there?

It is important to mention that there are a large number of models and styles of wood-fired ovens. However, we can classify them into 2 great guys:

  • Direct oven: is one that has a single cooking and combustion chamber and, therefore, contains the embers inside. That is, the embers are placed on one of its sides and, right next to it, the food is cooked. How do you light a wood oven?

Carrying out the ignition of our wood-fired oven correctly is essential to achieve a good cooking and finish. Just as you also have to adequately control the temperature since this will vary depending on the food we want to cook.

Before starting to cook, the first thing to keep in mind is that wood-fired ovens take a long time to reach cooking temperature and, furthermore, if the oven is outdoors it will take longer to heat up than if it is in a kitchen or if it has been turned on and has been in use for a few hours. This is crucial for control cooking times. The ideal is turn on the oven an hour and a half before to start cooking at least. If the oven has already been on and we only need to raise the temperature again, turning it on 50 minutes before will be enough.

Once we are clear about this we can begin to light our fire. For this you will have to place a good layer of firewood (approximately 10 centimeters) covering the entire surface of the oven. It is important that you place thinner firewood first and then thicker logs. And, for it to turn on well, you must control the shot, since it is in charge of regulating the amount of oxygen that enters the oven.

For it, the oven door and flue must remain open until the wood has been completely consumed and only the embers remain. At this point you will have to move the coals to the side to leave room in the oven for food and close the door and the oven draft so that the temperature remains uniform.
